I am debating wether the daily candle starts at 5pm EST (New York), or 0 hour GMT.

Could you point out which courses please? I would read up some more.

 

In my understanding much depends which markets you trade, if you mainly trade European session use GMT if USA use EST, some recommend using midnight EST, so you need to see what suites best your trading.
